I noticed recently that my cooking skills steadily increased (eventhough the ones who lived with me would probably disagree) in the last 3 years. Fortunately, I found an old picture of one of my meals when I first arrived here.

  1. Is that grill pan huge or did you just buy like 2 cm^2 piece of the meat??

    Food tip: grilled salmon with baba ghanough.

    1. buy salmon filé. Buy it frozen. Let it thaw in fridge or submersed in a waterproof plastic bag in lukewarm water. Rub salt, pepper, other spices into it (sumac is good). Grill it with that thing. Both sides, it’s done when skin gets loose easily. You probably need 2 pieces.

    2. baba ghanough: buy small jar (like 120 g, not the 1 kg) of grilled aubergine pulp. Buy can of UNSALTED tahini (e.g. Al-Wadi brand). Buy concentrated lemon juice in the plastic package shaped like lemon. Dump the pulp into a bowl. Shake the tahini can, then take 3-4 tablespoons of that over the pulp. Squirt about 1 second long squirt of lemon juice over it. Mix with a spoon like mad until the mixture turns white and becomes “sticky”.

    Combine. Eat.

    Dunno about exact nutrition values but it won’t harm you 🙂
